For 24 years Tara and Brian Beattie ran Mange Tout Ltd., a hospitality company that operated multiple Cafés and a Catering Business. We struggled managing our margins across our kitchens and teams. Recipes were not being prepared consistently; properly costed; and menus did not always have correct allergen information.
So, in 2007 we pushed Excel to its limits and built an internal tool to ease our pain. However, as we grew and regulations got more stringent it struggled to keep up so during Covid we digitised and created Prepsheets.com
Prepsheets.com is a webapp where kitchens import their ingredients, their recipes, and manage their margins. Prepsheets ensure kitchen’s recipes are backed by the latest prices from suppliers; kitchens allergen and calorie labels meet regulations; and dishes are prepared consistently across teams and locations.
In Mange Tout it enabled us highlight and renegotiate key ingredient prices with suppliers, remove low margin dishes from menus and reduce our food waste. This increased our food margin by 4% which equated to a saving of €80,000 in 2021.
Chefs are incredibly busy so it’s simple and provides just the right information when they need it. We are currently inputting all ingredient information into a central database within the platform so all our customers have to manage is their prices and recipes.
Our goal is to improve Ireland’s hospitality industry’s gross margins while at the same time reducing the industry's food waste and for Prepsheets to be the byword of good kitchen management.
