On the 15th October Irish free-range chicken producers ‘Farmers to Market’ announced details of a new foodservice business listing with Dalata, Ireland’s largest hotel operator which features hotels such as The Maldron and Clayton Hotel groups in its portfolio. The trade deal, that originated at Bord Bia’s Trade Breakfast at Bloom in June 2019, sees Farmers to Market Free-Range Chicken Burgers listed on bar menus in 35 Maldron and Clayton hotels on the island of Ireland. Farmers to Market, founded by brothers Charles and John Smith in 1991, is a family-run business that is passionate about providing premium free-range chickens to market. They were the first farmers in Ireland to receive a licence from the Department of Agriculture to produce free range chicken in 1991 and at the same time formed a processing partnership with Irelands leading poultry producer, Manor Farm.
Sodexo Ireland teamed up with leading conservation organisation WWF-UK to host a pop-up vegan restaurant, the ‘Finer Diner’, at the Forum restaurant in the new Trinity Business School on Thursday 24th and Friday 25th October 2019. A PEL Waste Reduction Equipment glass bottle crusher creates space, reduces labour and saves on overall waste glass disposal costs. There are five products available each of which reduces the volume of waste glass bottles by 80%. The BB01 ‘Baby Jaws’ is an under-the-counter machine and allows staff to crush waste glass bottles as they are poured or returned from the floor. The BB09 ‘Mighty Jaws’ also sits in the bar area and offers a larger waste glass storage capacity than the BB01. Both these glass crushers allow staff to prioritise customer service over managing waste glass bottles in the bar area.

Ollie Keenan (pictured) is Sodexo All-Ireland Chef of the Year for 2019, winning gold for his sustainable themed menu. Ollie will now compete in front of a live audience at the Sodexo UK and Ireland Grand Final at the HRC Show (formerly Hotelympia) in London in March 2020.
The theme of this year’s competition is ‘Celebrating Our Sustainable Future’ and the focus was on the creative use of sustainable ingredients that support the Future 50 Foods initiative. 75% of the global food supply comes from only 12 plant and five animal species and the initiative is to help promote the top 50 plant-based foods identified by WWF-UK and Knorr Professional, that need to be incorporated more into daily food consumption to drive positive change in the use of natural resources.
